The holidays are a time where families and friends join together to not only exchange gifts and reminisce over the past year, but also to eat. Starting with Thanksgiving, the meals get large, with a variety of traditional dishes including green bean casserole, cranberries, and a seasonal favorite, pumpkin pie, and more. In this episode of Health Nuts, raw food advocate and chef, Alexa Torrens, shares some raw alternatives to these traditional dishes to impress your friends family with on your next holiday get-together.

RECIPES:
GREEN BEAN CASSEROLE
Marinate the following for a few hours:
- 1 pound green beans chopped
- 1 tbs lemon juice
- 1tsp honey
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Mix the following:
- 1/2 lg white onion
- pinch of salt
- 1/2 tsp oil
Caramelize onions by dehydrating for 2 hours
Make sauce by blending the following:
- 1 tsp lemon juice
- 1 tsp onion powder
- 1 tsp nutritional yeast
- 1/4 tsp celery seed
- 2 pinches of thyme
- 1-2 handfuls of dried mushrooms
- 1 cup water
Crush together the following for a topping:
- 1/2 cup sprouted almonds
- 3/4 cup cashews
- 1 tsp onion powder
- a pinch of salt and pepper
Layer everything together and dehydrate for 2-4 hours
NUT LOAF
Soak nuts overnight and rinse before use.
- 3/4 cup walnuts
- 3/4 cup sunflower seeds
- 3/4 cup almonds
- 1 red pepper
- 1/2 red onion
- 1/4 cup parsley
- 1/8 cup ginger
- 1/4 cup celery
- 1-2 cloves garlic
- half a hot pepper
- 1/4 tsp salt
- 1/2 tsp cumin
- 1/2 Tbs rosemary
- 1/2 Tbs tarragon
- 1/8 cup olive oil
Process all nuts and vegetables to small cubes. Mix together evenly and form a loaf. Dehydrate for 4-6 hours.
CRANBERRY SAUCE
Process together:
- Orange Zest
- Juice of half an Orange
- Pinch of Salt
- 2 cups of cranberries - soak for 1 hour prior
ALMOND NOG
Blend together:
- 4 cups almond milk (View recipe at http://korduroy.tv/shows/health-nuts/nut-milk-dairy-free)
- 4 bananas
- 2 handfuls of soaked dates
- cloves
- nutmeg
- cinnamon
- salt
PUMPKIN PIE
Filling:
- 1 small sugar pie pumpkin (about 1 cup) soaked
- 1 cup of cashews soaked
- 2 cups of dates
- 1 cup h2o
- 1/4 cup of coconut oil (liquid form)
- 3 t cinnamon*
- 1 t nutmeg*
- 1 t ginger*
- 1 t cloves*
- 1 T psyllium powder
**I mixed them all together for the show
Crust:
- 1 cup almonds
- 1 cup dates
- 1 T cinnamon
- pinch o sea salt
Press crust into pie dish. Pour filling over the top. Refrigerate overnight to let filling set.
