Rice Bowl

A rice bowl is a versatile way to creating a healthy and delicious meal. By combining a few simple ingredients to make a stir fry, you can easily add this vegan meal to your culinary repertoire. And the beauty of a rice bowl is that there is no single way to do it. Get creative with your ingredients and cultural influences (think Mexican, Thai, or even Korean) to make a variety of flavorful meals.


  • 1 c black beans
  • 1 c brown rice
  • 2 zucchinis
  • 1 squash
  • handful mushrooms
  • 1 bunch chard
  • 1 watermelon radish
  • 1/2 onion
  • 1 bell pepper
  • 1 bunch broccoli
  • garlic
  • turmeric
  • chipotle sauce
  • salt
  • pepper

Soak 1 cup of black beans in 2 cups water overnight. Cook soaked beans in fresh water at medium heat until tender. Cook rice simultaneously (1 c rice to 2 c water). Prep veggies by chopping/slicing/dicing to desired shape and size. Add fresh garlic to beans for a litte added flavor. Season with salt and pepper. Add veggies to oiled pan and cook until tender. Add chard at the very end (it cooks fast!). Salt and pepper to taste. Pack your bowl…rice on bottom, then layer up with beans, chipotle sauce, and stir fried veggies. Enjoy!
