Tropical Turkey

Thanksgiving is our favorite holiday here at Korduroy.tv but we’ve always wondered why our families don’t diverge from tradition and mix it up a little bit. There’s a lot of ways to cook a bird, and in this episode of Health Nuts we’re taking it to the tropics with a seasoning, glaze and relish garnish that will make your thanksgiving taste like tropical fruit and tan hula girls (or guys).

Recipe for a 12 pound turkey: (All temperatures in Fahrenheit)

3 Oranges
6 Cups of Orange Juice
8 Cloves of Garlic
2 Red Onions
1/2 Pineapple
1 1/2 Cups of Olive Oil
2 Tablespoons of Rosemary
Chili Pepper Powder
Crushed Black Pepper
Sea Salt
1/4 Cup Red Wine Vinegar
Handful of Mint

Turkey Seasoning:

3/4 cup olive oil
3 cloves garlic, chopped
2 tablespoons chopped fresh rosemary
8 chicken thighs, skin on
Salt and freshly ground pepper to taste

Mix the oil, garlic and rosemary in a bowl. Using a knife separate the skin from the meat and apply season under the skin of the entire turkey (takes about 10 minutes). Put turkey in an oven preheated to 325 degrees.

Spicy Orange Glaze:

2 tablespoons olive oil
1 red onion, coarsely chopped
4 cloves garlic, coarsely chopped
6 cups fresh orange juice
1 teaspoon chili powder
1 tsp Salt and freshly ground pepper

Place all ingredients in a medium saucepan and bring to a boil on the grill. Cook until reduced to 1 cup. Apply to turkey liberally about 1 hour after its been in the oven.

Orange-Pineapple Relish:

2 oranges, peeled and segmented
1/2 pineapple, peeled and diced
1 red onion, thinly sliced
1 tablespoon chopped fresh rosemary
1/4 cup red wine vinegar
2 tablespoons olive oil
Salt and pepper

Combine all ingredients in a bowl and season with salt and pepper. Serves 4 (make more for a Thanksgiving feast).

Remove turkey from oven once the core temp (using a penetrating thermometer) has reached 165 degrees. Let sit for 20 minutes to allow juices to set before cutting. Add left over glaze as a a tangy gravy substitute and garnish with your pineapple citrus chutney.
